Why dosing ring?
Experience showed me that Cafflano Kompresso produced the best results when using 14.5 g dose of coffee. Back in 2020 I've used a bottle-neck to add that amount of coffee without spilling. It worked pretty well, but still wasn't perfect.
And after understanding the importance of WDT (needles) for coffee distribution - it was clear, that a better funnel is needed. To achieve the most balance shot of coffee possible.
Proper tamper
I understand the idea behind a scoop which acts as a tamper. But in my experience it lacks consistency. And tamping force can't be high enough.
For basic coffee, which isn't espresso - fine. But when you want to squeeze espresso which can compete with your local coffee shop - a serious tool needed. That's why I designed a complete set to satisfy specialty coffee lovers.
How to make incredible Espresso
I highly recommend targeting 6 Bar pressure instead of 9 Bar with this machine. Because it could damage the basket if you do 9 Bar shots. But with 6 you will be totally fine and it is actually very tasty.
Espresso with Cafflano Kompresso - How hard to squeeze
In non-marketing words - for reaching 9 Bar you will need to apply around 54 kg of force.
And guess what? Average squeezing force of Humans is roughly 54 kg :) Try to squeeze scales to test.
What I recommend is to use 38 kg of force and lower. It will give you 6 Bar which will produce an incredible crema and complex espresso.
How to apply 38 kg of force?
It is either squeezing or pressing. Don't use squeezing + pressing since it's possible to go way beyond 54 kg. I personally can reach over 80 kg of force that way.
In short, it should feel hard enough, but not too hard. Don't try to squeeze it with the maximum force.
If you want to use pressing technique - please, try to place it on knee level surface. And place it on the floor scales. Press till you reach 33-38 kg and remember that feeling. You need to press on that red circle at the top with one hand. Even one try will be enough to understand how it feels.
But don't press with the soft area of your palm :)
