Cafec DEEP 27 - 15-250 recipe

This recipe is specifically designed to work with Deep 27 pour over dripper. And produce the result similar to my original 10-160 recipe.
Unlike 10 g recipe we will have only 4 pours here: 30-80-160-250. To compensate for bigger amount of liquid which goes through the coffee. That way the cup will still be clean, with great aftertaste and body.
Grind size
As usual, we're using pretty coarse grind size, like sugar to the touch. It will depend on your coffee, just target needed intensity. So that you coffee isn't watery but not too intense and bitter.
I'm using 3.2 on Kinu m47 (3 rotations and 2 numbers). It's similar to 22 clicks on Comandante c40.
Water temperature
I always suggest to start from 90°C. I'm using a light roast coffee but it's suitable even for medium roast.
The recipe
- 1 pour - 30 g (spiral motion)
- 2 pour at 0:30 - to 80 g (to the center, medium speed of flow, 6-8 g per second)
- 3 pour - to 160 g (to the center)
- 4 pour - to 250 g (to the center)
We doing 3 and 4 pour when the coffee switches from flow to drips.
Total brewing time is expected to be 2:00. From here - coffee will start to drop. Wait for additional 30-40 seconds to let it drain in a "drop mode" to get a perfect cup of coffee.
Explanation
We're doing each next pour with the bigger amount of water. Because we need to wash out the coffee particles from a paper filter walls. That way coffee always have enough contact with water and we don't need to pour the water on the filter (which is tricky).
