Small Dose Pour Over Coffee Recipe - Deep 27, Flower Dripper

Originally I developed this pour over recipe for Deep 27, but it will work with Hario V60 and other brewers as well.

Research

I accidentally found a great recipe which works for 10 gram doses. When preparing a review of Cafec Deep 27 pour over brewer at first I thought that I will use it for Osmotic Flow exclusively. But it didn’t work as expected, it took too long to brew. And most people will not enjoy that.

So I started trying different approaches. First attempt was the most reliable and easy recipe - 14-220. I immediately observed that such an approach isn’t suitable here. Because with the big portions of water, coffee will start to float and then end up sitting on the walls of the brewer. 

That’s why I think that the best fit for this narrow brewer is a small pours. I ended up with 10 grams of coffee and 160 grams of water. And pretty coarse grind size for such a dose.

10 grams pour over recipe

Coffee: 10 grams

Grind size: like sugar to the touch (as a starting point)

Water: 160 grams (90°C)

Pouring at medium speed (I use around 6 grams per second flow rate). 

  • 1 pour - 30 grams (spiral motion)
  • 2 pour - at 0:30 - to 60 grams (center pour)
  • 3 pour - when water flow turns to drops - to 90 grams (center pour)
  • 4 pour - when water flow turns to drops - to 120 grams (center pour)
  • 5 pour - when water flow turns to drops - to 160 grams (center pour)

We always start the second pour at 0:30 but then we can add the water every 20 seconds or use a water flow as an indicator. For Deep 27 with ABACA+ filters - I use the flow. For Hario V60 and Cafec Flower - usually pour every 20 seconds, because it doesn’t drain that fast.

Total brewing time: 2 minutes (usually). For Deep 27 I let it drip for around 30 seconds after the flow is finished.

If you have a slow filter - it could be different. And in that case - use 20 second pours. 

Filters that I use: cafec abaca (for the flower) and cafec abaca+ (for deep 27). Hario V60 filters usually have a relatively fast drain as well.

Interesting fact: Cafec deep 27 paper filter could be stored in "Mr. Heavy" coffee filter holder.

The result

It will depend on your coffee, but usually I perceive an interesting, short acidic note. And coffee is mostly sweet and rounded. Though, it’s not heavy.

In terms of extraction, I prefer TDS around 1.3%. For regular people: adjust the grind size so that the coffee will be easy to drink and not too intense. 

Coffee shouldn’t be watery. And all of the flavors should be easily perceived. If coffee feels too heavy, especially in aftertaste, consider making the grind size bigger.

What grind settings I use: 3.2 on Kinu m47. And around 22 clicks on Comandante c40.
